Beaufort Street’s favourite French bistro Le Rebelle returned from the Christmas break with a few tweaks to the menu, including this summer hit of 500-day grain fed bavette (flank steak) with onion soubise, blackened carrots and Roquefort.

Chef Liam Atkinson co-owns Le Rebelle with sommelier wife Sarah, and this dish is yet another example of his ability to build a deceptively simple but harmonious and flavoursome dish. As always, he’s humble about his creation.

“It’s just a beautiful bit of meat cooked over binchotan coal. All the flavours on the plate are just quality ingredients – Roquefort cheese, onion puree, charred carrots. They speak for themselves.”

Bookings are released in advance at 10am Friday and are always in demand. Early evenings or Friday lunch are your best shot at a sneaky walk-in.
