My favourite dish from last night’s sampling of Northbridge Brewing Company’s “The Butcher and the Chef” menu was the smoked pig cheek with apple, green tomato and maple bacon! The cheek was so soft it was hard to get on the fork, and the delicate garam masala spicing gave a subtle curry effect.
